1) In a large skillet, melt the butter and sauté the onion. Add in the minced garlic and sauté another 2 minutes.
2) Add the heavy cream.
3) Add the pepper and garlic.
4) Stir in both the Monterey and Colby Jack cheese.
5) Stir in the defrosted corn.
6) Pour into a casserole dish, top with Parmesan.
7) Bake at 350 degrees for 20 minutes.
