3 heads garlic, roasted & cloves removed from peels
Instructions
In a large saucepan saute the onion in olive oil over medium-high heat until soft, about 4 to 6 minutes. Add the garlic and cook, stirring, for 1 minute.
Add tomato paste, salt, balsamic, hot sauce, red pepper, Italian seasoning and basil - cook for 1 minute. Add the tomatoes and their juices, crushing them with your hands as you place them in the pan (be very careful! they are messy and squirt!). Stir to combine and bring to a boil.
Reduce to a simmer and simmer for 20 minutes stirring occasionally.
Add the roasted garlic and simmer for 30 to 45 more minutes. Serve over pasta.
