Rinse oxtails, and season kinda heavy because the water is going to dilute the flavor some while cooking. Cut up a Onion, green pepper, and garlic clove in the pot of oxtails. Cover with water, and boil on medium high. Once they start boiling, lower the heat to medium low.
Check the oxtails every 30 min to see how tender they are getting. Once the fork is piercing the meat easily, lightly sprinkle your seasonings on the meat again. This will make sure it is not bland and should stick because you will not cook much longer, also, most of your water should be gone. If your water is cooking out faster then they are getting tender just add about two cups of water at a time. When done, you don't want them swimming in water.
