1 - 2 bell peppers - cut up

1 onion

1/2 cup corn (optional)

1 can jalapenos (optional)

1 - 2 lb meat of your choice (cooked chicken, ground turkey, ground beef)

2-3tbsp taco seasoning
|
|
1-2 cans Enchilada sauce
|
|
1 or 2 cans Cream of chicken (optional)
|

1 or 3 cups of rice
|
|

1 can of beans of your choice (black, refried, or red)
|
|
enough cheese to top

olives

Instructions |
|
|
Cook the veggies until they are almost done in oil
of your choice, add uncooked or cooked meat, season
with taco seasoning and cook until its browned.

Turn heat off and add the enchilada sauce, beans and
rice. Mix together well.
|
|
|
Put in a 13x9 pan. Top with cheese and olives. Bake
at 350 for about 30 minutes - or until cheese is
melted well. Covered.
|
|
|
This can feed a crowd, or be adjusted to a smaller
family. Plus its fairly quick and easy to make!

Serve alone, in tortillas, over chips, with sour cream, or however you like! Recipe is flexible, makes great left-overs!
