Combine sugar, flour and salt in a saucepan. Gradually add milk, mixing well. Cook and stgir over low to medium heat until mixture thickens and boils. Cook 2 minutes long and remove from heat. Stir small amount of hot mixture into slightly beaten egg yolks. Return hot mixture and cook 2 minutes, stirring constantly. Remove from heat.

Stir in butter and vanilla. Slice 3 bananas onto baked and cooled crust and top with filling.

Cover with meringue. 3 egg whites, 1/2 tsp vanilla, 1/4 tsp cream of tartar and 6 Tbsp sugar. Beat egg whites with vanilla and cream of tartar until soft peaks form. Gradually add sugar, beating until stiff peaks form and sugar is dissolved. Spread over filling, sealing to edge of pastry. Bake in 350° oven about 12-15 mn or until golden. Cool.

To make butterscotch filling, substitute brown sugar for white sugar. To make chocolate filling, increase sugar to 1 c and add 2 squares (1 oz) unsweetened chocolate to the milk when preparing filling.
