Crush the thin mint cookies to make fine crumbs. They will crush a bit better if you freeze them a bit before hand before crushing with a rolling pin. Or you could use a food processor. I think.

Beat egg whites and salt until stiff and glossy. Fold in crumbs and vanilla.

|
Bake at 350*F for 35 minutes, then cool and refrigerate for 3 hours.
|
|
|
Cover with whipped cream. Some pretty garnishes are chocolate chips, shaved chocolate or more crushed thin mints.
