1. Rinse Salmon and pat dry.
2. Season the Salmon with an even sprinkle of black pepper, old bay seasoning, jerk seasoning and cilantro, and coat the entire salmon. Set aside to marinate for about 5-10mins (optional). Taste for salt, and add if needed.( The Old Bay contains salt.)
3. On a baking sheet, place a sheet of aluminum foil and it spray with oil or just add some oil so the Salmon won’t stick. Then transfer the Salmon onto the baking pan. Do not cover, don’t need to steam it, let it bake.
4. Turn the oven on to 350 degrees and bake for 15mins. When you touch the center of the salmon it should be medium to firm and it’s done. You don’t want to overcook it so the center is firm because it then dries the meat.
5. While the salmon is baking, you will make the mushroom sauce.
6. In a pan, add the butter to melt, then add the mushrooms. Season with salt and pepper to taste. Let the mushroom cook for about 5mins then add the heavy cream and simmer on low heat for about 5mins.
