1 1/4 lb top sirloin, trimmed of excess fat, cut to 24 cubes of equal size/thickness
2T Mt. Evans Butcher's Rub
2 tsp. salt
2T Baker's Brew Coffee Spice
2T butter plus 2 tsp. high heat frying oil
Finishing salt to taste (Smoked Salt, Murray Creek, Herbed Salt)
Instructions
In shallow dish, place wooden skewers in single
layer and pour brewed coffee to cover. Allow to
soak for 10 minutes.
While skewers soak, divide sirloin chunks evenly
between two bowls. Toss half of sirloin with Mt.
Evans Butcher's Rub and 1 1/2 tsp. salt. Be sure
to press rub to coat meat on all sides.
Toss remaining half of sirloin with Baker's Brew
Coffee Spice and 1/2 tsp. salt and press rub to
coat all sides of meat.
Remove skewers from soak and Skewer 2 cubes at ends
of each of the 12 skewers (6 of each type of
skewer).
Heat 1T butter plus 1 tsp. frying oil in large
non-stick skillet over medium-high heat and coat
pan evenly. Add 6 of one batch of skewers,
cooking 3 minutes per side or until a dark crust
is acheived on both sides. Remove from pan and
allow skewers to rest.
Wipe out pan and heat other 1T butter plus 1 tsp.
oil and repeat process with other batch of 6
skewers.
To serve, sprinkle with favorite finishing salt.
