Spread rinsed and drained black beans out on a paper towel
or dish towel and let them dry for 15 minutes. Beat 2 eggs with
the flour, onions, cilantro, garlic, cumin, coriander, salt, pepper
and hot sauce.
With blade in food processor whirl chips in food processor until
finely crushed. Add drained and dried black beans and pulse 4
or 5 times until coarsely mixed. Fold bean and chip mix into
egg mixture. Refrigerate at least 1 hour.
Form bean mix into patties using half cup of mix for each.
Makes 6 or 7 patties. Heat a frying pan with 2 or 3 tablespoons
of oil. Pan fry the bean burgers 3 or 4 at a time, 5 to 7 minutes
on each side until browned.
Mix mayo with chipotles in adobo. Serve burger on bun with
mayo and desired garnishes such as avocado, lettuce, onion,
tomato, etc.
Patties can be frozen after frying for later use.
