Preheat oven to 425. Stir together sugar, flour, nutmeg,
cinnamon, and salt. Mix with apples. Turn into pastry lined
pan. Dot with butter. Cover with top crust.
Cover edges with foil to prevent excessive browning.
Remove for last 15 minutes of baking.
For French Apple Pie- omit butter and top apple with crumb
topping-
1 cup all-purpose flour
1/2 cup firm butter
1/2 cup brown sugar (packed)
Bake 50 minutes. Cover topping with foil if top browns too
fast.
