Combine water, sugar and yeast and let sit for
5 minutes. Add salt, flour and 1/4 cup butter.
Mix on low with dough hook. Change to medium
until dough pulls away from sides and transfer
to lightly oiled bowl. Cover and let rise 1
hour till doubled.
Boil 10 cups water and baking soda. Turn down to
medium. Knead dough and divide into 16. Roll each
piece into rope about 16-18 inches. Wrap dough
around cheese and seal. Place onto parchment.
Boil two at a time for 30 seconds. Bake at 450 for
8-10 minutes and brush with 2 Tbsp butter and
sprinkle with salt.
