2 yellow Onions (halved, save larger peels for wrapping, dice rest)
1 lb. Ground Beef
1/4 c Water
1/4 c diced Onions
1/4 c chopped Parsley
1/4 c chopped Mushrooms
1 T Brown Sugar
1 T Spicy Ketchup (1 T reg Ketchup add squirt Sirachi sauce)
1 tsp Soy Sauce
1 tsp Worcestershire
1/4 c Panko Bread Crumbs
1 lb Bacon
BBQ Sauce
Instructions
Preheat oven to 425 degrees.
Cut off tops and bottoms of onions, remove exterior skin. Cut onion in
half lengthwise and peel the layers apart. Keep biggest layers to stuff
with meat and dice the remaining layers.
Mix ground beef with diced onion, parsley, brown sugar, chopped
mushrooms and parsley, condiments and brown sugar. Form into 5
individual sized meatball servings or 7 plus smaller ones.
Place meatballs inside 2 onion halves and wrap with 2 slices of
bacon, secure with toothpicks. Place bacon wrapped meatballs in
oven and cook 40 mins. Cover meatballs with BBQ sauce and bake
for an add'l 5 mins.
