1. Heat some oil in a pan.
2. Add Methi seeds and a little turmeric and chilli
powder(very little, just for offsetting the sweet and
tangy flavor).
3. Add chopped kairi and a little water. Cover the
pan to let the kairi soften in steam.
4. Once the kairi is a little softer, add generous
amount of jaggery. Cover again to cook further.
5. After a while, stir the kairi being caramelized by
jaggery. Add coarse fenugreek (saunf) powder. And
salt to taste.
6. Cook without covering till the kairi are tender
yet not fully disintegrated.
7. Taste and adjust seasoning. Switch off the flame
and enjoy.
