Beat eggs until foamy and then combine milk. Mix together flour, salt, and nutmeg. Add to eggs and milk a little at a time until the dough is stiff and elastic. If too thick, add 1 tablespoon of water at a time to reach desired consistency.
Use Spaetzle Maker over pot of boiling water or soup. When noodles rise to the surface, remove with a slotted spoon or strainer. Place in a bowl and cover to keep warm.
