Preheat the oven to 375. Mix the dry ingredients in a large bowl. In another bowl, beat the soymilk, egg, and oil together. Pour this over the dry ingredients and stir to mix. Stir in the honey.
Lightly oil an 8 x 8-inch baking dish or a large pie pan. Pour the batter into the pan and bake for 10 minutes, or until a toothpick or knife inserted into the center of the cornbread comes out clean.
