Optional- Sour cream, pico de gallo and fresh cilantro
Instructions
Prepare a grill at medium high heat. Also,
preheat oven at 350 degrees.
Season steak with salt and pepper. Grill steak
until cooked to preference. Allow to rest for 5
minutes and then slice against grain.
Heat oil in large skillet over medium heat. Add
bell peppers, onions, salt, pepper. Then add
cumin, oregano, chili powder, and garlic powder.
Saute and stir until soften, about 5 minutes.
Spread beans on tortilla. Add steak, then some
onions and peppers, then sprinkle some cheese.
Fold and roll up tortilla into burritos. Lay
in casserole dish. Pour enchilada sauce over
burrito and sprinkle some more cheese. Bake in
oven until cheese is melted and bubbly, about
20 minutes. Serve with optional garnishments.
