1) Combine all of the pre-chilled ingredients and refrigerate and hold at 41' or less until serving. 2) Place lettuce leaf on plate, serve 1/2 cup of chicken salad on lettuce. 3)Garnish plate with1 sl. each of tomato, pineapple and dinner roll or crackers. OPTIONS- grapes could be eliminated from salad and a small bunch served in place of the pineapple garnish on the platter as well as any other type of fresh fruit- Strawberry, Melon slice, etc.
