Either steam your fresh cauliflower or put your frozen cauliflower in
a microwave safe dish and cook for 10-12 minutes or until fork
tender. Add the Neufchatel cheese and microwave for another 30
seconds. Stir.
Add the chicken, enchilada sauce, salt, pepper, cheddar cheese,
yogurt, and cilantro. Stir.
Bake in a preheated oven at 375 degrees in an ovenproof casserole
dish for 20 minutes. OR you could microwave on high for 10 minutes.
Serve hot
