4 oz dried chick peas, soaked, simmer for 1/2 hrs until tender, cooled, drained and rinsed
1/4 cup red onion cut in thin circles
1 tsp minced ginger
1/4 cup diced bell pepper
1/4 cup diced seeded cucumber
1/4 cup diced carrot
1/4 cup diced celery
juice of 2 limes
2 Tbs red wine vinegar
2 clove minced garlic
2 tbs olive oil
2 TBS sugar
1/4 tsp cilantro
salt & pepper
2 Tbs water
1 diced apple
1 tomato seeded and diced
Instructions
Combine water, lime juice, vinegar and sugar, stir
until dissolved. Combine all ingredients, stir in
vinegar mixture and toss with olive oil. Serve
chilled.
