2 TBS peanut oil
|
|
4-8 oz ground beef
|

1 lg white onion, finely chopped
|

1 clove garlic, crushed
|
|
1 or 2 fresh green chiles finely chopped
|

6-12 almonds, processed into flour
|
|
1 large carrot, grated
|
|
1 tsp brown sugar
|
|
4 cups chicken stock
|
|
|
|
8 ounces baby spinach, finely shredded
|
|
7 oz corn, fresh or frozen, about 3 ears off cob
|
|
1 large tomato, seeded and chopped
|
|
juice of 1 lemon
|
|
salt
|

|

|
|
|

Instructions |
|
|
Heat the oil in a pan, add the beef, garlic and
oil. Cook until the meat changes color. Pour in
stock and bring to a gentle boil.

Add remaining ingredients, simmer about 3 minutes.
Do not overcook.
