20 oz. canned, fire-roasted, diced mild green chiles
1 lb. ground turkey or turkey breast cut to small pieces
1 1/2 tsp. salt
1 tsp. ground black pepper
32 oz. chicken or turkey broth
3 (15 oz) cans cannellini or white northern beans, rinsed and drained
1T fresh oregano leaves, minced
2 tsp. thyme leaves, minced
1/ 4 c medium grind cornmeal
optional garnishes- lime wedges, sour cream/Greek yogurt, shredded cheddar or jack cheese, scallions
Instructions
In large dutch oven or stock pot, heat oil over medium heat. Add onion, jalapeno, salt, pepper, granulated garlic and cumin. Saute for 5 minutes until vegetables have softened. Add green chiles, ground turkey/chunks, oregano and thyme. Saute for 5 minutes, until turkey is no longer pink.
Add broth and beans and cover pot, increasing heat to medium high until comes to a boil. Reduce heat to low and stir in cornmeal slowly, until fully distributed.
Continue to simmer, covered, on low heat for 45 minutes, stirring at 15 minute intervals. After 45 minutes, turn off heat and allow to sit, covered for 10 minutes.
To serve, serve garnishes in separate bowls and allow each person to serve and garnish as desired.
