chop first 5 stuffing ingredients in mini food processor.
saute in pan with olive oil.
add whole wheat mini croutons and apricot jam to mixture
and mix well while heating in pan.

roll mixture into each capon.
season top with garlic powder and paprika and apricot jam.
|
|
|
bake covered at 375 for 1 hour.
brown for 15 minutes uncovered.
