1. Preheat oven to 400.
2. Cook whole zucchini in a large amount of boiling salt and water for 5 minutes.
3. Cut lengthwise and slice the tops off and scoop out the pulp.
4. Stir together chicken, vegetables, tomatoes, and seasonings
5. Scoop into zucchini and bake 10 - 15 minutes.
