heat oil in a dutch oven over med, add onion and
garlic cook stirring occasionally until tender
about 5 min, add chorizo cook stirring
occassionaly 3 min. Add stock salt pepper
potatoes and tomatoes increase to high and bring
to a boil. Partially cover pan reduce heat to
med-low and simmer 15 min. Stir in kale and
simmer until potatoes are tender and kale softens
about 5 min.
