1. Rinse and pat dry chicken.
2. Spread thyme evenly in bottom of baking dish.
3. Place chicken over thyme and scatter cauliflower around the chicken.
4. In small bowl, combine shallot, olive oil, salt, pepper, lemon zest, lemon juice, olives, and garlic.
5. Pour over chicken and refrigerate for at least one hour or overnight.
6. Bake at 400 degrees for 45 - 55 minutes until chicken is cooked through and cauliflower is well browned.
