Heat the oil in a heavy bottomed saucepan over
medium high heat. Add the almonds, ginger,
paprika, coriander, turmeric, cinnamon,
cardamom, chili powder, mace (if desired) and
cloves; stir for 30 to 60 seconds, until
fragrant. Add the meat and toss to coat with
spices. Cook, stirring, for a few minutes,
until browned on all sides.
