1 yellow onion, chopped

3 carrots, peeled and chopped

3 cups sliced mushrooms
|

3 cans vegetable broth

1 cup cous cous or quinoa

Salt and pepper to taste

Shredded chicken (optional)

Instructions |
|
|
Heat olive oil in pot over medium heat. Add onion
and carrots cooking until soft.

Add mushrooms and cook until soft.
|
|
|
Add broth and cous cous, simmer for 10 minutes.
|
|
|
Stir until blended. Add salt and pepper to taste.
