1 tbsp olive oil

1 medium onion, chopped

1 large carrot, peeled and chopped

1 cup mushrooms, sliced
|

1 zucchini, chopped

3 cloves garlic, minced

1 bouillon cube
|
|
6 c water, boiling
|
|
15 oz diced tomatoes
|
|

1/2 cup uncooked quinoa
|
|
16 oz black beans
|
|
16 oz chick peas
|
|
1 tsp curry powder
|
|
1 tsp cinnamon
|
|
1 tsp nutmeg
|
|
2 cups spinach, chopped
|
|
Salt and pepper to taste
|

Chicken/Beef/Turkey (optional)

Instructions |
|
|
Heat oil in large pot. Add onion and sautee until
soft. Add carrots, mushrooms, zucchini and garlic.
Sautee 5-7 minutes.

Pour water over bouillon cube and stir to
dissolve. Add mixture, tomatoes, quinoa, black
beans, chickpeas and spices to veggies.
|
|
|
Bring to boil then simmer 15-20 minutes. Add
chopped spinach, simmer another 15-30 minutes. Add
salt and pepper as needed.
