Mix mayonnaise, lemon juice, salt and pepper together. Fold in chicken, grapes, celery, onions, nuts and Craisins. Halve each croissant lengthwise, leaving just enough uncut to hold the two halves together. When you are ready to serve the sandwiches, place lettuce leaf on bottom half of croissant and spread chicken salad on top of lettuce leaf, and top with other half of croissant. Use toothpick to hold sandwich halves together if desired. Serve immediately.
