GF Mexican chicken & avocado soup

1 tsp ghee
|

4 stalks celery finely diced
|
|
1 large sweet onion finely diced
|
|
4 carrots finely diced
|
|
2 cloves garlic
|
|
1 tbs cilantro
|
|
1 tbs ground cumin
|
|
1 tsp sea salt
|
|
1 tsp ground black pepper
|
|
|
|
2 quarts chcken broth
|
|
1 cup canned pumpkin
|
|
1 1/2 pounds of salsa verde chicken ( see slow cooked salsa verde chicken)
|
|
Garnish-
|
|
2 avacodo sliced
|
|
Chopped fresh Cilantro
|
|
Lime wedges
|
|
Coarse Sea salt to taste and coarse ground black pepper
|

|

Instructions |
|
|
Melt ghee in a large pot over medium heat. Add Celery, onion,
and carrots and cook for 5 minutes over medium heat. Add
garlic and cook for 1 minute.

Add cilantro, cumin, salt, pepper, broth and pumpkin and stir to
combine. Bring to a boil, then lower heat and leT soup simmer
10'minutes.
|
|
|
Add shredded Salsa Verde Chicken 1 1/2 lbs and adjust salt
and pepper to taste.. Heat briefly to warm the chicken and let
soup simmer 10 minutes.
|

|
Ladle soup into bowls and Garnish with avacodo slices,
cilantro, a squeeze of lime juice and some coarse sea salta
and cracked pepper
