1 green pepper, diced

1 15-ounce can kidney or black beans, drained and rinsed

1 1/2 cups cooked rice

1 1/2 cups vegetable stock

Instructions |
|
|
In a large skillet heat 1 tablespoon of oil over
medium high heat. Add green pepper, onion and celery
and saute for about 5 minutes.
|

In a small bowl, combine seasonings. Add to sauteed
veggies and mix.
|
|
|
Add beans, cooked rice and vegetable stock and
combine. Cook for 5 minutes.
