1 1/3 cup uncooked long grain white rice, rinsed and drained
2 cups water
1 tsp salt
2-4 limes
Instructions
On stove, heat oil over low heat. Saute uncooked rice for approx 5 minutes. Add water and salt. Stir. Bring to a full rolling boil. Cover and simmer until rice is tender and water is absorbed (approximately 18-20 minutes).
Remove from stove. Add chopped cilantro and squeeze lime juice over rice. (NOTE- After 2 limes I suggesting stirring it and taste testing. I usually use all 4 limes but that may be too tart for most....I also suggest using fresh limes. The bottled lime juice gives it a strange taste).
