Heat olive oil in large skillet over medium high
heat. Add garlic and jalapeno, and cook, stirring
frequently, until fragrant, about 1 minute.
Stir in quinoa, vegetable broth, beans,
tomatoes, corn, chili powder and cumin. Bring
to boil; cover, reduce hear and simmer until
quinoa is cooked through, about 20 minutes.
Note- If you prefer a little more spice, wait
about 15 minutes to add the jalapeno and
tomatos
Stir in avocado, lime juice, cilantro, and ground
turkey (if desired).
Serve immediately.
