Melt butter in saucepan and blend in flour, salt, pepper and onion.
Cook till onion is almost cooked through. Gradually stir in chicken
broth. Cook stirring constantly until smooth and thickened. In a small
frypan cook the mushrooms in butter. In another pot boil the carrots
and potatoes. Add mushrooms, carrots, potatoes, celery and chicken
to the sauce. Mix well and pour into large casserole dish. If adding
dumplings you want this sauce to be hot when putting the dumplings
on top.

If making dumplings prepare the dumpling dough recipe. Mix the dry
ingredients, cut in the shortening, add the milk and mx just until
moistened. Don't over mix! Drop dumplings mixture on top of hot
stew in large spoonfuls and cover tightly with tin foil. Bake at 375
degrees for 20 minutes. For a biscuit type dumping leave the tin foil
off.
