In a large, very clean bowl (any trace of grease
will keep the whites from whipping to their
fullest volume) whip the egg whites with an
electric mixer on high speed until they hold soft
peaks. Add the sugar, salt, and cinnamon and beat
on low speed until just mixed. Stir in the nuts
and toss until well coated. Transfer the nuts to
the baking sheet and spread them out in a single
layer.
