Sauté mushrooms, onions, and celery over medium heat until mushrooms release some moisture. Cover and simmer 20 minutes on low or med/low. Meanwhile prepare white sauce.
Blend vegetables and white sauce (or part of white sauce) in food processor or blender until only small particles remain (or no particles if preferred). Return to saucepan.
Add rest of white sauce, salt, pepper, mustard and rice dream. This is the thickened version to use as condensed cream of mushroom soup in recipes. To eat as soup, thin with rice dream or chicken stock.
