Sliced Bananas or Shredded Coconut, to taste if desired
1 Pie Shell, baked
3 Egg Whites
6 Tablepsoons Sugar
1/4 Teaspoon Cream of Tartar
Instructions
Scald fresh and canned milk together. Set aside.
Combine flour, cornstarch, sugar, and salt.
Add to scaled milk and cook until smooth and thick.
Stir a small amount of hot mixture into egg yolks and add all yolks to hot mixture.
Stir well and cook a few minutes more.
Gently stir in sliced bananas or shredded coconut to taste, if desired.
Let cool before pouring into the baked pie shell.
Top with Meringue-
Beat egg whites until frothy.
Add Cream of Tartar and continue beating until stiff enough to hold peaks.
Gradually beat in the sugar and continue beating until mixture is stiff and glossy. (Slow and complete
blending will prevent beads of sugar.)
Bake at 300 degrees until meringue is set and light brown.
