Clean artichokes by holding stem and dashing up and down quickly I a deep bowl of water. Pull off bottom row of leaves, and cut off sharp points of other leaves with scissors. Cut the stems almost off leaving 1/4 inch.
Steam in salted water 40-60 mns until tender. Remove from heat and keep warm.
Wsh cauliflower and removes leaves. Chop into large pieces. Blender - 1/3 of cauliflower, 2 TBSP butter, 1 TBSP chives, and 1/2 cup cream -rough mixture. Repeat with rest of ingredients. Remove to saucepan with nutmeg, s an p
5 mns bf serving heat cauliflower mixture, adding butter to maintain liquidy. Split artichokes down middle, remove chokes, with spoon, fill cavity with pureed cauliflower mixture. Wrap foil 250 oven to keep warm Serve HOT!
