Cut the cauliflower, including the stems, into smallish same size
pieces. Using a food processor place 1/2 of cut up cauliflower in
machine. Pulse a few times until it is finely chopped enough to
resemble rice, but slightly larger. Transfer to a bowl and set aside.
Finish with the remaining cauliflower.
Peel garlic cloves and slice in half lengthwise.
Heat oil in pan over medium heat until it feel hot when you hold your
hand there.
Add the garlic cloves and stir-fry until you smell garlic. This goes very
fast. 1-2 min.
As SOON as you see the slightest color change in the garlic
IMMEDIATELY remove garlic and discard. (don't let it brown or the
garlic will leave a bitter taste)
Add cauliflower to the hot pan and season generously with salt and
fresh ground black pepper. Stir-fry the cauliflower, turning it over
often, until its starting to soften and lose the raw taste, about 3-4
minutes.
Turn off the heat, stir in the green onions and serve.
