Preheat oven to 350. Wrap the tortillas in a damp paper towel and
microwave for 30 seconds to soften them. Cover the bottom of your
oven safe pan with enchilada sauce.

Add about ¼ cup chicken to one tortilla at a
time and roll it up. Add it seam side down to your pan.
|
|
|
After all enchiladas are added top with enchilada sauce and cheese.
Cover the pan with foil and bake for about 15
minutes.

|
Take the foil off and bake for an additional 5
minutes until all the cheese is melted.
