Wipe meat with cold, damp cloth. Put chops in large skillet; top with lemon, onion and green pepper; sprinkle with salt and pepper. Pour tomatoes over the dish and sprinkle with oregano.
Cover and cook slowly on the cooktop for 1 or 1/2 hours until done (pork is done at 165 degrees)
This is super easy. Even if I'm only making 2 pork chops, I keep the same amount of the other ingredients.
