2/3c Packed Brown Sugar

2/3c Cider Vinegar
|

2/3c Ketchup
|

2 tsp. Soy Sauce

1 Lb. Pork Loin, cut into 1in cubes

1 Tblsp Oil
|
|
1 Medium Onion, chunked
|
|
2 Medium Carrots, sliced
|
|
1 Medium Green Pepper, cut into 1in pieces
|
|
|
|
1/2 tsp minced garlic
|
|
1/4 tsp ground ginger
|
|
1 8oz Can Drained Pineapple Chunks
|

Hot Rice
|

Instructions |
|
|
Combine first 4 ingredients and pour half into a container/bag. Marinate pork in sauce for 30 mins.

Drain and discard marinade. Cook Pork for 3 mins in oil then add onion, carrots, green pepper, garlic, and ginger, sautaing until pork is tender.
|
|
|
Add other half of marinade, bringing to a boil. Cook for 1 min then add pineapple. Serve with Rice.
