Remove stems from spinach leaves and tear spinach into bite-size pieces. Set aside in large bowl. Keep chilled. Fry bacon until crisp. Drain. Cook onion in bacon drippings until tender. Add remaining ingredients. When ready to serve, pour hot bacon mixture over spinach leaves. Sprinkle with bacon;toss and serve. If desired, sprinkle on chopped hard-boiled eggs. Delicious!
