1 lb. boneless beef stew meat, in 1 inch cubes

3 large onions, chopped
|

2 medium carrots, sliced
|

4 cloves garlic, minced
|
|
2 Tbsp. tomato paste
|
|
1 & 1/2 tsp. instant coffee crystals
|
|
2 Tbsp. all-purpose flour
|
|
2 Tbsp. vegetable oil
|
|
12 small red-skinned potatoes, cut into quarters
|
|
|
|
1 Tbsp. chopped fresh thyme or 1 tsp. dried thyme leaves
|
|
1 carton (32 oz.) beef broth
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |

|
Season beef with pepper and coat with flour. Heat oil in skillet. Add beef and cook until browned.

Place onions, carrots, potatoes, garlic, and thyme in crock pot. Mix tomato paste, coffee and 1 c. broth. Pour into crock pot with remaining broth.

|
Cover and cook on low 8-10 hours or high 4-5 hours.
|
