cheese - cheddar or other of your choice grated or cut into small lumps
Instructions
Finely chop an onion & saute in oil or butter until
soft.
Cut cauliflower florets into small pieces & boil or
steam until your required softness.
Cook a handful of pasta per portion. Either boil or
microwave (quicker & less steamy). Any short pasta
will do, eg macaroni, spirali, fusili, penne,
farfalle.
Heat frozen peas in microwave.
Mix all the above ingredients in a dish suitable to
go under the grill. Season as required.
Cheese sauce - melt a large knob of butter in a
saucepan on medium heat, add a heaped tablespoon of
flour, stir until mixed then start adding liquid. I
use water from cooking vegetables; you may prefer
to use milk, but I consider there is sufficient in
the cheese. Stir with a fork or a hand whisk,
incorporating the liquid until there are no lumps
before adding more. Add your cheese cut into small
lumps & stir, adding more liquid if you feel it's
too thick. I use Cheddar but any well-flavoured
hard cheese will do.
You may already know how to make a cheese sauce. If
you want more precise instructions and quantities,
consult a recipe book or look online.
Pour the sauce over the dish of veg & pasta,
sprinkle with sunflower seeds & brown under a hot
grill for a few minutes.
Serve with your veg of choice or with a mixed
salad.
