1 heaping cup of Uncle Ben's Converted Orig long grain rice
|
|
Saute 1 very large onion in 1/2 c mazola oil (Spanish or sweet)
|
|
1 rounded Tbsp Paprika
|
|
1/2 fat can of whole tomatoes squeeze with hands
|
|
2 heaping cups of chop up frozen or fresh peppers sweet & hot
|
|
1 1/2 tsp salt to taste
|
|
3 cups of water
|
|

Instructions |
|
|
Place dried rice in 9x13 pyrex dish.
Saute onion, add Paprika, whole tomatoes.
Cook down before adding water stirring all the
time so not to burn.
|
|
|
Add frozen peppers to sauce and cook awhile
stirring. Add salt & water and let boil. Add
some black pepper.
Pour mixture over dried rice.
|
|
|
Bake 400 degrees for approximately 30 minutes or
until rice is cooked.
|
|
|
NOTE-
DO NOT USE VIDALIA ONION
OPTIONAL- For Tomatoes, we can use 3-4 frozen ones chopped up in
place of canned.
