Boil sultanas in water for 8 minutes
Remove from heat and drain - reserve 2/3 Cup of the liquid.

Cream butter and sugar until light and fluffy
Add beaten eggs to this mixture.
|
|
|
Fold in sifted flour and baking powder - together with sultanas and cooled liquid. Add Vanilla Essence.
|
|
|
Pour into greased and paper lined fruit cake tin
Bake at 150oC for 1 3/4 to 2 hours
