Put oil in pan over med-low heat. Dredge chicken
through the egg, then the breadcrumbs, repeat.
Panfry until done and until a golden crust, about
7 1/2 minutes per side.
Top with overlapping pepperoni, followed by
marinara and cheese. Cover, turn heat off, and
wait 5 minutes.
