Make sure steaks sit at room temperature for at least 45 minutes.
Drop a few drops of olive oil on top, add kosher salt and pepper. I
also like a little Montreal steak seasoning.

Make sure grill is hot. You will leave the lid open on the grill during
the entire grilling process. Using tongs (never a fork) place the filet
on the grill for 2 minutes. After 2 minutes, ROTATE the steaks 90
degrees and wait 3 minutes.

Now you can flip the steak, using the tongs, and place in the same
spot on the grill. Wait 2 minutes, ROTATE, and then another 3
minutes.

Using instant-read meat thermometer, insert from the side into the
center of the steak. Medium Rare remove from grill at 140 deg., and
Medium at 156 deg. Let rest for 2 minutes. Internal temperature
should rise 5 deg. during resting.
