1 c. quinoa
|

15 oz can chickpeas, rinsed and drained
|

Baby spinach, coarsely chopped
|

2 ripe tomatoes, cored, seeded and chopped
|

1/2 cucumber, chopped
|

2 scallions, chopped
|
|
2 oz feta cheese, 1/2 c
|
|
5 T lemon juice
|
|
5 T olive oil
|
|

kosher salt, pepper
|
|
2 tsp balsamic (optional)

Instructions |

Cook quinoa. Combine dressing and add to salad. Can be made 2
hours ahead or more. Beth says Israeli feta from Trader Joes good.
